The BEST Brussel Sprouts w/ Nueskes Bacon & Sweet Onions

This is one of my favorite all-time side dishes! It goes amazing with literally any choice!


  • 1-2 pounds of Brussel sprouts 
  • 2 cloves of minced garlic
  • 2 TBSP of your favortie seasoning
    • I use a blend I buy online pictured above called MOSS. You obviously do not have to use this.
    • Seasonings that would be good:
      • pinch of paprika
      • Parsley
      • Red Pepper Flakes
      • Cumin
      • S&P
  • Cooking oil
  • 4-6 slices of bacon (I use only the best from Nueskes!)
  • 1 Large sweet onion julienned (cut into strips) 


  1. Unpack Brussel sprouts and pile on a counter next to the garbage can (for easy cleaning) 
  2. Preheat oven to 400 degrees
  3. Take each individual sprout and peel back the outer layer leaves with your fingers and rip off and throw away
    • This makes so you do not have to clean them, and you get rid of many contaminants
  4. after all the outers leaves are peeled, cut off the bottom stem (about 1/4″) and then cut the sprout in half lengthwise (from stem to top)
  5. Take the halved sprouts and put into a bowl
  6. Put in 2 TBSP of cooking oil/minced garlic/choice of seasonings
  7. Toss until covered evenly
  8. line baking sheet with foil and nonstick cooking spray
  9. place each half of sprout face down and evenly spread out to make sure none are stacking
  10. Cut bacon into small 1/4″ slices
  11. On top of the sprouts and in between, spread out the julienned onions and bacon as pictured above (picture 2)
  12. put in oven and roast for 25-30 minutes until dark golden brown and crispy
  13. IF the sprouts looked burnt DO NOT WORRY, just like blackened corn or grilled pineapple, it will taste delicious even with that extra char!
  14. Take out and DIG IN
